Chef Joel Novarro’s Ceviche Recipe

 Weigel Production Corp.

Ingredients:

6 ounces of fresh white fish (tilapia, corvina, mahi mahi, seabass, etc.)

Juice of 2-3 limes

1 tablespoon finely chopped red bell pepper

1/4 of a small red onion finely sliced

2 tablespoons grapefruit soda

Salt to taste

Cilantro finely chopped to garnish

Instructions:

Add fish (1/2 inch pieces), bell pepper, red onions, salt and lime juice to small bowl

Gently mix and cover. Refrigerate for 15-30 minutes to “cook”

Add soda and salt to taste

Garnish with cilantro and serve with saltine crackers
